Product Description

A French fries processing line is a complete production system for turning fresh potatoes into frozen French fries. The line combines potato washing, peeling, cutting, blanching, color protection, drying, pre-frying, de-oiling, cooling, quick freezing, and packaging.

The exact equipment configuration depends on the potato variety, raw-material quality, required French fry size, production capacity, and final product requirements. A properly designed line keeps these factors in mind from the beginning instead of treating each machine as a separate unit.

Our French fries processing line is designed for continuous production and can be configured for different plant capacities and processing requirements.

French Fries Production Process

The basic process is:

Potato receiving → Washing and peeling → Sorting → Cutting → Rinsing → Blanching → Color protection → Dewatering and drying → Pre-frying → De-oiling → Cooling → Quick freezing → Packaging → Cold storage

The supplied process information also describes a sequence using steam peeling, spiral conveying, washing and peeling, manual picking, cutting, rinsing, blanching, color protection, vibration, drying, frying, cooling, quick freezing, and packaging.

Each step has a specific purpose.

1. Potato Washing and Peeling

Fresh potatoes first need to be cleaned and peeled before cutting.

The line can use different peeling methods according to production capacity and investment requirements.

Steam peeling is suitable for larger production. The supplied technical material notes that steam peeling can have relatively low peeling loss and is normally recommended when the raw-material throughput is at least about 4 tons. It uses a pressure vessel, automatic weighing, PLC control, and variable-speed operation.

For smaller production capacities, brush peeling can also be used. The referenced equipment range includes approximately 200, 300, 500, 1,000, 1,500, and 2,000 kg/h models. Common brush-peeler models listed in the source material include QPJ-800, QPJ-1200, QPJ-1500, and QPJ-2400.

After peeling, a picking table allows workers to remove potatoes that are not completely peeled or are otherwise unsuitable for further processing. This helps maintain product consistency before cutting.

2. Potato Cutting

The peeled potatoes are transferred to a French fry cutter.

The cutter produces strips with a consistent cross-section. The cutting size can be selected according to the final product specification. For example, 1/4 inch fries, 7×7 fries, 10×10 fries, or wavy fries. All sizes can be customized.

Cutting equipment is an important part of a French fries production line because the strip dimensions affect subsequent blanching, drying, frying, freezing, and final texture.

The supplied technical material describes several cutter options, including locally manufactured machines, European-style machines, and FAM-type cutting equipment. These options differ in cutting quality, capacity, adjustability, and equipment cost.

3. Washing machine

After cutting, the potato strips are washed again. This machine is used to wash off starch on cutted french fries before go into the blanching machine. With hoisting system, bubble washing system, conveying system, spraying system…

The bubble washing process removes surface impurities and loose starch from the cut potatoes. This prepares the strips for blanching and helps maintain a clean processing environment.

4. Blanching

Blanching is an important stage in frozen French fries production.

It can affect the color, texture, firmness, oil absorption, and subsequent frying performance of the potato strips. The supplied technical information describes blanching as a process that can deactivate enzymes, reduce sugar, provide a degree of starch gelatinization, improve the potato structure, and reduce surface starch-related oil absorption during frying.

Different blanching methods can be selected according to the production capacity and process requirements.

High-temperature blanching: used for enzyme inactivation and starch gelatinization.
Secondary blanching(Low-temperature blanching): can be used for further sugar reduction, with the source material giving 75°C as an example.

For equipment selection, a mesh-belt blancher is described as suitable for lower production at a lower equipment cost, while a spiral blancher is intended for higher production and comes at a higher equipment cost.

5. Color Protection

Potato strips can be treated after blanching to help improve their surface color.

The supplied process notes describe immersing the strips for approximately 1–2 minutes in water at 20–30°C with a suitable food-quality processing additive, such as glucose or disodium dihydrogen pyrophosphate.

The actual formulation and processing conditions should be determined according to the raw potato variety and the customer’s product requirements.

6. Dewatering and Drying

Before frying, excess surface moisture must be removed from the product. There are two types of dehydration equipment: ambient-temperature air dryers, which use centrifugal fans to blow off surface moisture; and steam-heated dryers, which utilize high-temperature steam (110°C) to more effectively remove moisture, resulting in a dry, crispy surface and lower internal moisture content. French fries processed this way absorb less oil, thereby reducing production costs and improving taste.

7. Continuous Frying

After drying, the potato strips enter the pre-frying stage.

Pre-frying removes excess moisture and develops the characteristic flavor and texture of french fries; it is one of the most critical steps in the entire production line. Typical pre-frying conditions involve a temperature of 180°C and a duration of 50–70 seconds.

Frying parameters should not be viewed as fixed settings applicable to all potatoes. Key influencing factors include:

Potato dry matter content
Reducing sugar content
Potato maturity
Storage duration
Type of oil
Oil-to-product ratio
Frying temperature
Frying time

MATTON engineers adjust the frying process based on the specific characteristics of the potatoes entering the production line. We welcome your inquiries, and our engineers will provide you with a highly customized technical solution. Depending on actual processing conditions, the oil content of the fries after the initial frying stage can vary; however, MATTON’s proprietary processes and technologies enable an oil content that is more than 10% lower than the industry average.

8. De-Oiling and Cooling

After frying, the French fries pass through a de-oiling section.

Vibration and conveying remove surface oil while the product begins to cool. A further screening stage can remove products that do not meet the required size or quality and remove additional surface oil.

This stage prepares the French fries for rapid freezing.

9. Quick Freezing

Quick-freezing is the final major processing step prior to packaging.

French fries undergo rapid cooling and freezing to enable long-term storage while maintaining quality.

The LTH-1000 quick-freezer supplied by MATTON features a freezing process lasting approximately 45 minutes, during which the product temperature drops rapidly, with the core temperature quickly reaching -18°C.

10. Packaging

After quick-freezing, the french fries are fed into an automatic packaging machine. The BZJ-620 features a 14-head combination weigher and a 620-series forming system; the packaging system handles processes such as feeding, weighing (or filling), bag forming, sealing, date printing, counting, and finished bag discharge. Downstream equipment can include metal detectors, X-ray or vision inspection systems, case sealers, and robotic palletizers.

Fresh Potato Requirements for French Fries

Raw potato quality has a direct effect on the final French fries.

The supplied technical information recommends potatoes with an oval shape, relatively uniform size, yellow external color, and white internal color. Potatoes should not have serious deformation, damage, rot, disease, or sprouting.

Parameter Reference requirement
Potato shape Oval
Dry matter ≥20%
Reducing sugar ≤0.20–0.25%
Potato length ≥68 mm
External color Yellow
Internal color White
Moisture ≤80%
Starch 14–17%
Specific gravity 1.08–1.12

For French fry production, the recommended potato diameter is approximately 50–70 mm; varieties such as Shepody, Burbank, and Atlantic are commonly used by our clients in the Middle East, Central Asia, Australia, and South America. These specifications should be considered a reference for processing. If you have any questions or ideas, please feel free to email us at mike@mattonmachinery.com.

Why Potato Dry Matter and Sugar Matter

Raw potato selection is one of the first decisions that affects French fries quality.

Higher dry matter can improve yield and reduce oil uptake. However, excessively high dry matter can also affect the eating texture. The source material describes the desired French fry texture as crisp on the outside and soft inside.

Reducing sugar is also important. High sugar levels can contribute to darker frying color and affect the finished product. The technical material recommends keeping reducing sugar below the stated processing limits.

Potato storage must also be considered. Low-temperature storage can cause starch to convert to sugar. The supplied process notes recommend moving potatoes from cold storage to a higher-temperature area before processing when required.

For this reason, a French fries production line should be designed around the actual raw potatoes available at the plant, not only around the desired machine capacity.

The exact equipment list is not identical for every project. Production capacity, potato variety, fry size, packaging format, factory layout, and the customer’s process requirements all affect the final configuration.

French Fries Production Capacity

The supplied technical material gives a reference ratio of approximately 2:1 between fresh potatoes and finished frozen French fries. In other words, approximately two parts of fresh potato are required for one part of finished frozen French fries under the stated reference conditions.

Actual yield can vary because of peeling loss, trimming, cutting loss, moisture removal, frying, and other process conditions.

For a commercial project, production capacity should therefore be calculated from the complete process rather than based only on the nominal capacity of one machine.

French Fries Line Designed Around Your Product

A French fries processing line is more than a group of individual machines.

The raw potato determines the starting conditions. Cutting determines the strip size. Blanching affects color and texture. Drying affects frying performance. Frying affects moisture, oil content, color, and flavor. Freezing and packaging then determine how the finished product is handled and stored.

For this reason, the production line should be configured as a complete process.

We can select the equipment according to the required production capacity, potato characteristics, French fry size, processing method, packaging size, and factory conditions.
